My easy-smeasy Potato Soup
I promised my easy recipe….so, here you go:
I used my crock pot for this recipe. See, when Stephen and I got engaged, some of our family and friends were so generous with gifts. With one of our Target gift cards…we decided to invest in a Crock Pot. Well, I love to cook and I am always looking for new meals and new ways to cook them. This Crock Pot has been our best investment yet!!
Now, I only made about a half of a pot of the soup. So, decide on how much soup you want to make, then you will know what size of the Campbell’s soup you will need and you will also know how to maximize the recipe.
What you will need:
~about 7 whole potato’s, skinned and cubed (the number of potato’s will depend on how thick you like the soup)
~3 10 3/4 oz cans of Campbell’s cheese soup
~dash of Salt & Pepper
In the Crock Pot (or soup pot, depending on how you are cooking the soup) follow the directions on the Campbell’s soup can…MIX SOUP + 1 CAN OF MILK. Do this with all three cans of soup. Next, add the potato’s. Salt & Pepper the soup to your “liking”. That part is tricky for me because I LOVE salt…I always use too much! Throw the lid on your crock pot and cook on high until the potato’s are tender. When you are ready to serve, garnish the soup with shredded, cheddar cheese and crumbled bacon. YUUUMMMYYYYY!!!!
*To altnerate this soup, here are some easy idea’s to switch it up a bit:
~Do 2 cans of cheese soup and 1 can of broccoli and cheese soup
~Add a little tobasco sauce to spice it up
~Add a dobble of sour cream to the soup before you serve
~Add chives as a garnish
